4 cups fresh raspberries, rinsed and drained

4 cups ripe peaches, peeled, pitted, and sliced

1 cup granulated sugar, divided

2 tablespoons cornstarch

1 teaspoon vanilla extract

1 teaspoon lemon juice

2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon salt

1/2 cup unsalted butter, melted

1 cup milk

1 teaspoon ground cinnamon

Preheat the oven: Preheat your oven to 350°F (175°C).

    Prepare the fruit mixture: In a large mixing bowl, combine the raspberries and sliced peaches. Sprinkle with 3/4 cup of granulated sugar, cornstarch, vanilla extract, and lemon juice. Toss gently to coat the fruit evenly. Set aside to let the juices meld while you prepare the batter.

      Make the cobbler batter: In another bowl, whisk together the flour, baking powder, salt, and remaining 1/4 cup granulated sugar. Pour in the melted butter and milk, and stir until just combined. Be careful not to overmix; it’s okay if there are a few lumps.

        Combine the fruit and batter: Grease a 9x13 inch baking dish. Pour the fruit mixture into the bottom of the dish, spreading it out evenly. Then, dollop the batter over the fruit using a spoon, covering it as much as possible without worrying about complete coverage; it will spread while baking.

          Add cinnamon and bake: Sprinkle the top of the batter lightly with ground cinnamon for added flavor. Bake in the preheated oven for 45–50 minutes, or until the cobbler is golden brown and bubbly. A toothpick inserted into the cobbler should come out clean.

            Cool and serve: Allow the cobbler to cool for about 15 minutes before serving. This step allows the juices to thicken slightly. Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream if desired.
