Roasted Corn Avocado Salsa

3 ears of fresh corn, husked

2 ripe avocados, diced

1 medium red onion, finely chopped

1 red bell pepper, diced

1 jalapeño, seeded and minced (optional for spice)

1/3 cup fresh cilantro, chopped

Juice of 2 limes

1 teaspoon salt, or to taste

1/2 teaspoon black pepper

Olive oil for roasting

Preheat Oven: Start by preheating your oven to 400°F (200°C).

    Roast the Corn: Place the husked corn directly on a baking sheet. Drizzle with olive oil and sprinkle a pinch of salt over each ear. Roast the corn in the preheated oven for about 25-30 minutes, turning occasionally until the kernels are charred and caramelized. Once done, remove from oven and allow to cool slightly.

      Cut Corn Kernels: Once the corn is cool enough to handle, use a sharp knife to cut the kernels off the cob into a large mixing bowl.

        Combine Ingredients: Add the diced avocados, chopped red onion, diced red bell pepper, jalapeño (if using), and cilantro to the bowl with the corn.

          Dress the Salsa: Squeeze the fresh lime juice over the mixture and season with salt and black pepper. Gently fold everything together until well combined, ensuring you do not mash the avocados too much.

            Taste and Adjust: Taste the salsa and adjust the seasoning, adding more lime juice, salt, or pepper as needed.
