Roasted Tomato and White Bean Toast

2 cups cherry tomatoes, halved

1 can (15 oz) white beans (cannellini or Great Northern), drained and rinsed

3 tablespoons olive oil

1 teaspoon balsamic vinegar

2 cloves garlic, minced

1 teaspoon dried oregano

Salt and pepper, to taste

4 slices of hearty whole-grain bread

1/4 cup fresh basil leaves, chopped

Optional: Crushed red pepper flakes, for a spicy kick

Optional: Fresh lemon juice, for drizzling

Instructions
 

Preheat the oven to 400°F (200°C).

    Prepare the tomatoes: On a baking sheet, toss the halved cherry tomatoes with 2 tablespoons of olive oil, minced garlic, dried oregano, salt, and pepper. Spread them out in a single layer.

      Roast the tomatoes: Place the baking sheet in the oven and roast for about 20-25 minutes, or until the tomatoes are blistered and caramelized, stirring halfway through.

        Prepare the white bean mixture: While the tomatoes roast, in a mixing bowl, combine the white beans, balsamic vinegar, remaining 1 tablespoon of olive oil, salt, pepper, and half of the chopped basil. Use a fork to gently mash the beans, leaving some whole for texture.

          Toast the bread: While the beans and tomatoes are preparing, toast the slices of bread until golden and crispy. You can do this in a toaster, on a grill, or in the oven.

            Assemble the toast: Once the toasted bread is ready, generously spread the white bean mixture over each slice. Top with the roasted cherry tomatoes and their juices.

              Finish and serve: Garnish each toast with the remaining chopped basil. Drizzle with fresh lemon juice and sprinkle with crushed red pepper flakes if desired. Serve immediately and enjoy!
