Roasted Veggie and Goat Cheese Tacos

2 bell peppers (red and yellow), diced

1 medium zucchini, diced

1 small red onion, chopped

1 cup corn (fresh or frozen)

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

Salt and black pepper, to taste

8 small corn or flour tortillas

1 cup crumbled goat cheese

1 avocado, sliced

1/4 cup fresh cilantro, chopped

Lime wedges, for serving

Optional: hot sauce or salsa for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Veggies: In a large mixing bowl, combine the diced bell peppers, zucchini, red onion, and corn. Drizzle with olive oil, then sprinkle in the smoked paprika, garlic powder, salt, and black pepper. Toss to coat all the veggies evenly.

      Roast the Veggies: Spread the vegetable mixture on a baking sheet in a single layer. Roast in the preheated oven for about 20–25 minutes, or until the veggies are tender and slightly caramelized, stirring halfway through.

        Warm the Tortillas: While the veggies are roasting, warm the tortillas. You can either place them in a dry skillet over medium heat for about 30 seconds on each side, or wrap them in aluminum foil and heat in the oven for the last 5–10 minutes of the veggie roasting time.

          Assemble the Tacos: Once the veggies are done, remove them from the oven. Take a warm tortilla and add a generous scoop of the roasted veggies. Top with crumbled goat cheese, a few slices of avocado, and a sprinkle of fresh cilantro.

            Serve: Serve your tacos with lime wedges on the side for squeezing over the top. Add hot sauce or salsa for extra flavor if desired.
