8 oz spaghetti or linguine

1 lb large shrimp, peeled and deveined

4 cups fresh spinach

4 cloves garlic, minced

1/4 cup sun-dried tomatoes, chopped

1/4 cup white wine (optional, or use vegetable broth)

1/4 cup olive oil

1 tsp red pepper flakes (adjust to taste)

Zest and juice of 1 lemon

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Grated Parmesan cheese (for serving)

Instructions
 

Cook Pasta: In a large pot of salted boiling water, cook the spaghetti or linguine according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the rest and set aside.

    Sauté Shrimp: In a large skillet over medium heat, add olive oil. Once hot, add the shrimp. Season them with salt, pepper, and red pepper flakes. Cook for about 2-3 minutes on each side until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
