2 salmon fillets (approx. 6 oz each)

1 tablespoon olive oil

Salt and pepper, to taste

1 teaspoon smoked paprika

1 teaspoon garlic powder

For the Watermelon Glaze:

2 cups watermelon, cubed and seeded

1 tablespoon honey (or maple syrup for vegan)

Juice of 1 lime

1 teaspoon fresh ginger, grated

Salt, to taste

For Assembly:

8 large lettuce leaves (such as butter, romaine, or iceberg)

1 cucumber, thinly sliced

1 carrot, julienned

Fresh cilantro or mint leaves, for garnish

Sliced red chili, for a kick (optional)

Instructions
 

Prepare the Watermelon Glaze:

    - In a blender, combine the watermelon cubes, honey, lime juice, grated ginger, and a pinch of salt. Blend until smooth.

      - Transfer the mixture to a small saucepan over medium heat and simmer for about 10-15 minutes, stirring occasionally, until it reduces to a glaze-like consistency. Remove from heat and let cool.

        Cook the Salmon:

          - Preheat your grill or non-stick skillet over medium-high heat.

            - Drizzle olive oil over the salmon fillets, then season both sides with salt, pepper, smoked paprika, and garlic powder.

              - Grill or pan-sear the salmon for about 4-5 minutes on each side, or until cooked through and flakey. Remove from heat and let it rest for a couple of minutes.
