Sausage and Peppers Stuffed Bell Peppers

4 large bell peppers (any color)

1 lb Italian sausage (mild or spicy, your choice)

1 medium onion, finely chopped

2 cloves garlic, minced

1 cup cooked rice (white, brown, or even quinoa)

1 can (14.5 oz) diced tomatoes with Italian herbs

1 cup shredded mozzarella cheese

1 tsp Italian seasoning

Salt and pepper to taste

2 tbsp olive oil

Fresh basil, chopped (for garnish)

Prepare the Peppers: Preheat your oven to 375°F (190°C). Slice the tops off the bell peppers and remove the seeds and membranes. Place them cut side up in a baking dish.

    Cook the Sausage: In a large skillet over medium heat, add the olive oil. Once heated, add the Italian sausage. Break the sausage apart with a spatula and cook until browned and fully cooked through (about 5-7 minutes). Drain any excess fat.

      Sauté the Vegetables: Add the chopped onion and minced garlic to the skillet with the sausage. Sauté until the onion is translucent, about 3-5 minutes.

        Combine Filling: Stir in the cooked rice, diced tomatoes (with their juices), Italian seasoning, salt, and pepper. Mix well and cook for an additional 2-3 minutes until heated through.

          Stuff the Peppers: Remove the skillet from heat and stir in half of the shredded mozzarella cheese. Evenly spoon the sausage and rice mixture into each bell pepper until they are generously filled.
