2 large boneless, skinless chicken breasts

1 cup BBQ sauce (your favorite brand)

1 large sweet potato, peeled and diced

1 tablespoon olive oil

Salt and pepper, to taste

1 teaspoon smoked paprika

4 large whole wheat tortillas

1 cup fresh spinach, roughly chopped

½ cup shredded cheddar cheese

¼ cup red onion, thinly sliced

Optional: avocado slices for garnish

Instructions
 

Prepare the Chicken:

    - In a bowl, combine the chicken breasts with 1/2 cup of BBQ sauce, ensuring they are well coated. Allow to marinate for at least 30 minutes (or overnight for best flavor).

      Cook the Sweet Potatoes:

        - While the chicken is marinating, preheat your oven to 400°F (200°C).

          - In a baking dish, toss the diced sweet potatoes with olive oil, salt, pepper, and smoked paprika. Spread them out in a single layer.

            - Bake for 25-30 minutes, or until tender and slightly caramelized, stirring halfway through.

              Grill the Chicken:

                - Preheat your grill or grill pan over medium heat. Remove the chicken from the marinade, shaking off excess sauce, and place on the grill.

                  - Grill for 6-7 minutes per side, brushing with more BBQ sauce during the last few minutes of cooking, until the chicken is cooked through (internal temperature of 165°F or 74°C).

                    Shred the Chicken:

                      - Once cooked, remove the chicken from the grill and let it rest for a few minutes. Then, shred it using two forks.

                        Assemble the Wraps:

                          - Warm the tortillas in a dry skillet over medium heat for about 15 seconds per side to make them pliable.

                            - Layer each tortilla with a handful of chopped spinach, followed by sweet potatoes, shredded BBQ chicken, sliced red onion, and a sprinkle of cheddar cheese.

                              Wrap and Serve:

                                - Fold in the sides of the tortilla and then roll it tightly from the bottom to the top.
