1 lb (450g) beef sirloin, thinly sliced against the grain

2 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon cornstarch

2 tablespoons vegetable oil (divided)

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 cup broccoli florets

1 cup snap peas, trimmed

3 green onions, sliced (white and green parts separated)

3 cloves garlic, minced

1 tablespoon fresh ginger, minced

2 tablespoons low-sodium beef broth

1 tablespoon sesame oil

Salt and pepper to taste

Cooked rice or quinoa, for serving

Instructions
 

Marinate the Beef: In a medium bowl, combine the sliced beef, soy sauce, oyster sauce, and cornstarch. Toss until the beef is well coated. Let it marinate for at least 15 minutes while you prep the veggies.

    Prepare the Veggies: Wash and slice the bell peppers, broccoli, and snap peas. Ensure all vegetables are roughly the same size for even cooking.

      Sauté the Beef: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Once hot, add the marinated beef in a single layer. Cook for about 2-3 minutes without stirring, then stir-fry for another 2 minutes or until the beef is browned and just cooked through. Remove the beef from the pan and set aside.

        Stir-Fry the Vegetables: In the same pan, add the remaining tablespoon of vegetable oil. Toss in the white parts of the green onions, minced garlic, and ginger. Sauté for about 30 seconds until fragrant.

          Add the Veggies: Add the sliced bell peppers, broccoli florets, and snap peas to the skillet. Stir-fry for about 4-5 minutes until the vegetables are tender-crisp.

            Combine Everything: Return the cooked beef to the pan. Pour in the beef broth and sesame oil, and toss everything together to combine. Season with salt and pepper to taste. Stir-fry for an additional 2 minutes until everything is heated through.

              Garnish and Serve: Take the pan off heat, sprinkle with the green parts of the green onions, and serve immediately over cooked rice or quinoa.
