1 lb (450g) beef sirloin, thinly sliced into strips

1 medium onion, finely chopped

2 cloves garlic, minced

8 oz (225g) mushrooms, sliced (cremini or button)

2 tbsp olive oil

2 tbsp unsalted butter

1 cup beef broth

1 cup sour cream

2 tbsp Worcestershire sauce

1 tsp Dijon mustard

½ tsp paprika

Salt and pepper, to taste

12 oz (340g) egg noodles

Fresh parsley, chopped, for garnish

Instructions
 

Cook the Egg Noodles: In a large pot of salted boiling water, cook the egg noodles according to the package instructions until al dente. Drain and set aside.

    Sear the Beef: In a large skillet over medium-high heat, heat 1 tablespoon of olive oil and 1 tablespoon of butter. Add the thinly sliced beef, season with salt and pepper, and sear for 2-3 minutes until browned but not fully cooked. Remove the beef from the skillet and set it aside.

      Sauté Vegetables: In the same skillet, add the remaining tablespoon of olive oil and butter. Add the chopped onion and cook for 2-3 minutes until softened. Stir in the minced garlic and sliced mushrooms, cooking for another 5-7 minutes until the mushrooms are browned and tender.

        Create the Sauce: Pour in the beef broth, Worcestershire sauce, Dijon mustard, and paprika. Stir to combine, scraping any browned bits from the bottom of the skillet. Bring to a simmer and let it cook for about 5 minutes.

          Finish with Cream: Reduce the heat to low and stir in the sour cream until smooth. Add the seared beef back to the skillet, along with any accumulated juices. Cook for an additional 5 minutes until the beef is heated through and the sauce is creamy. Adjust seasoning with salt and pepper to taste.
