6 large buttery croissants, torn into bite-sized pieces

1 cup cooked sausage, crumbled (you can use pork, turkey, or vegetarian alternative)

1 cup fresh spinach, chopped

1 cup shredded cheese (cheddar or a blend works well)

6 large eggs

2 cups whole milk

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon Dijon mustard

Salt and pepper, to taste

Fresh chives or parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish with non-stick spray or butter.

    Prepare the Base: In a large mixing bowl, combine the torn croissant pieces, cooked sausage, chopped spinach, and half of the shredded cheese. Toss everything together to ensure it’s well mixed.

      Whisk the Mixture: In another bowl, whisk together the eggs, whole milk, garlic powder, onion powder, Dijon mustard, salt, and pepper until well combined.

        Combine Mixes: Pour the egg mixture over the croissant and sausage mixture in the first bowl. Gently fold until the croissant pieces are well-coated with the egg mixture. Ensure everything is evenly distributed.

          Transfer to Baking Dish: Pour the mixture into the greased baking dish, spreading it evenly. Sprinkle the remaining cheese on top.

            Bake: Bake in the preheated oven for about 35-45 minutes, or until the casserole is puffed, golden brown on top, and a knife inserted in the center comes out clean.
