Savory Chicken and Rice Casserole

1 ½ cups uncooked brown rice

3 cups low-sodium chicken broth

2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

1 pound boneless, skinless chicken thighs, cut into bite-sized pieces

1 cup frozen peas and carrots mix

1 teaspoon dried thyme

1 teaspoon paprika

½ teaspoon black pepper

1 teaspoon salt (or to taste)

1 cup shredded cheddar cheese

½ cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 375°F (190°C).

    Cook the Rice: In a medium saucepan, bring 3 cups of chicken broth to a boil. Add the brown rice, reduce heat to low, cover, and simmer for 40-45 minutes, or until the rice is tender and has absorbed the liquid. Remove from heat and set aside.

      Sauté the Chicken: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Add the minced garlic and sauté for an additional minute.

        Add Chicken: Add the chicken pieces to the skillet, cooking until browned and cooked through, about 5-7 minutes.

          Combine Ingredients: Once the chicken is cooked, stir in the frozen peas and carrots, dried thyme, paprika, black pepper, and salt. Mix well to ensure the chicken and veggies are evenly seasoned.

            Mix with Rice: In a large mixing bowl, combine the cooked rice with the chicken and vegetable mixture. Stir in half of the shredded cheddar cheese and half of the Parmesan cheese until evenly distributed.
