Ingredients

1 lb (450g) ground beef

2 large potatoes, peeled and diced

1 medium onion, finely chopped

2 cloves garlic, minced

1 cup beef broth

2 tbsp Worcestershire sauce

1 tsp dried thyme

1 tsp paprika

Salt and pepper to taste

1 cup frozen mixed vegetables (peas, carrots, corn)

1 sheet refrigerated pie crust (or homemade)

1 egg, beaten (for egg wash)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Cook the Potatoes: In a medium pot, bring salted water to a boil. Add the diced potatoes and cook until tender, about 10-15 minutes. Drain and set aside.

Sauté the Aromatics: In a large skillet over medium heat, add a splash of oil. Sauté the chopped onion and minced garlic until onions are translucent, about 3-4 minutes.

Brown the Beef: Increase the heat to medium-high and add the ground beef to the skillet. Cook until browned and crumbly, approximately 5-7 minutes. Drain any excess fat.

Combine Ingredients: Stir in the beef broth, Worcestershire sauce, thyme, paprika, salt, and pepper. Allow the mixture to simmer for about 5 minutes until slightly thickened. Add the cooked potatoes and frozen mixed vegetables, stirring until evenly combined.

Assemble the Pie: Roll out the pie crust on a lightly floured surface. Place it into a 9-inch pie dish. Pour the beef and potato filling into the crust. Cover with another sheet of pie crust, seal the edges, and cut slits in the top to allow steam to escape.

Add the Egg Wash: Brush the top of the pie with the beaten egg to create a golden crust.

Bake the Pie: Place the pie in the preheated oven and bake for 30-35 minutes or until the crust is golden brown.

Cool and Serve: Once baked, remove the pie from the oven and let it cool for about 10 minutes before slicing. Serve warm and enjoy your savory creation!
