2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1/4 teaspoon black pepper

1 teaspoon garlic powder

1 tablespoon fresh rosemary, finely chopped (or 1 teaspoon dried)

1 tablespoon fresh thyme, finely chopped (or 1 teaspoon dried)

1 cup sharp cheddar cheese, grated

1/2 cup unsalted butter, cold and cubed

3/4 cup buttermilk (or milk with 1 tablespoon vinegar)

1 tablespoon honey (optional, for a hint of sweetness)

1 egg (for egg wash, optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

    Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, black pepper, garlic powder, rosemary, and thyme.

      Incorporate Butter: Add the cold cubed butter to the dry mixture. Using a pastry cutter or your fingers, work the butter into the flour until the mixture resembles coarse crumbs.

        Add Cheese: Stir in the grated cheddar cheese until evenly distributed.

          Combine Wet Ingredients: In a separate bowl, mix the buttermilk and honey together. Pour this mixture into the flour and butter mix. Gently combine until just mixed; do not overwork the dough.

            Shape the Dough: Turn the dough out onto a lightly floured surface. Pat it into a rectangle about 1 inch thick. Fold the dough over itself a couple of times to create layers, then pat it down again to 1 inch thick.

              Cut Scones: Use a sharp knife or a pizza cutter to cut the dough into squares or triangles.
