Savory Italian Sausage and Peppers Wraps

Ingredients
  

1 lb Italian sausage (mild or spicy, depending on preference)

2 tablespoons olive oil

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 green bell pepper, sliced

1 medium onion, sliced

3 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper, to taste

1 cup marinara sauce

4 large flour tortillas or wraps

1 cup shredded mozzarella cheese

Fresh basil leaves, for garnish

Cook the Sausage: In a large skillet over medium heat, add the Italian sausage. Cook until browned and fully cooked, breaking it apart with a wooden spoon as it cooks (about 7-10 minutes). Once cooked, remove it from the skillet and set aside.

    Sauté the Vegetables: In the same skillet, add olive oil. Once heated, add the sliced onions and peppers. Sauté for about 5-7 minutes until the vegetables are soft and beginning to caramelize. Stir in the minced garlic, oregano, basil, salt, and pepper, cooking for an additional 1-2 minutes until fragrant.

      Combine Ingredients: Return the cooked sausage to the skillet with the sautéed vegetables. Pour in the marinara sauce and stir to combine. Let it simmer on low for about 5-10 minutes, allowing the flavors to meld. Adjust seasoning as needed.

        Prepare the Wraps: While the mixture is simmering, warm the flour tortillas in a separate pan or microwave for about 30 seconds until pliable.

          Assemble the Wraps: Lay a tortilla flat and spoon the sausage and pepper mixture in the center. Sprinkle with shredded mozzarella cheese. Fold in the sides of the tortilla and then roll it up tightly from the bottom. Repeat with remaining tortillas and filling.

            Toast the Wraps (Optional): For added crispiness, place the wraps seam-side down in a preheated skillet or grill pan over medium heat. Toast for 2-3 minutes on each side until golden and cheese is melted.

              Serve: Slice the wraps in half diagonally and garnish with fresh basil leaves. Serve immediately with extra marinara sauce for dipping, if desired.
