Savory Rosemary Garlic Focaccia

4 cups all-purpose flour

2 teaspoons sugar

1 packet (2 ¼ teaspoons) active dry yeast

2 teaspoons sea salt

1 ¾ cups warm water (110°F/43°C)

¼ cup olive oil, plus extra for drizzling

4-5 cloves garlic, minced

2 tablespoons fresh rosemary, finely chopped

Flaky sea salt, for sprinkling

Activate the Yeast: In a small bowl, combine warm water, sugar, and yeast. Let it sit for about 5-10 minutes until frothy. This indicates that your yeast is active.

    Prepare the Dough: In a large mixing bowl, combine the flour and sea salt. Once the yeast mixture is frothy, add it to the flour mixture along with ¼ cup of olive oil. Mix until combined.

      Knead the Dough: Turn the dough out onto a floured surface and knead for about 8-10 minutes until it becomes smooth and elastic. Alternatively, you can use a stand mixer with a dough hook on medium speed for about 5-7 minutes.

        First Rise: Place the kneaded dough in a lightly greased bowl. Cover with a damp towel and let it rise in a warm area for about 1 to 1.5 hours, or until it doubles in size.

          Prepare Flavor Infusion: While the dough is rising, mix the minced garlic and chopped rosemary with a tablespoon of olive oil in a small bowl. Set it aside to allow the flavors to infuse.

            Shape the Dough: Once the dough has risen, punch it down gently. Transfer it onto a lined baking sheet or a greased rectangular baking pan (about 9x13 inches). Gently stretch and press the dough to fill the pan.

              Second Rise: Cover the dough again with a towel and let it rise for another 30 minutes until puffy.

                Preheat the Oven: During the second rising, preheat your oven to 425°F (220°C).
