8 oz (about 2 cups) penne pasta

1 lb Italian sausage (pork or turkey), casing removed

1 medium onion, diced

1 red bell pepper, sliced

1 yellow bell pepper, sliced

3 cloves garlic, minced

1 can (14.5 oz) diced tomatoes (with juices)

1 cup marinara sauce

1 tsp dried oregano

1 tsp dried basil

½ tsp red pepper flakes (optional for heat)

1 cup ricotta cheese

1 ½ cups shredded mozzarella cheese

½ cup grated Parmesan cheese

Salt and pepper to taste

Fresh basil leaves, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Pasta: In a large pot of salted boiling water, cook the penne pasta according to package instructions until al dente. Drain and set aside.

      Cook the Sausage: In a large skillet over medium heat, add the Italian sausage. Cook until browned and crumbled, about 5-7 minutes. If there's excess grease, drain it.

        Sauté the Vegetables: Add diced onion and sliced bell peppers to the skillet with the sausage. Sauté for about 4-5 minutes, until the vegetables are softened. Stir in the minced garlic and cook for an additional 1-2 minutes.

          Combine Mixture: Add the diced tomatoes (with juices), marinara sauce, dried oregano, dried basil, and red pepper flakes (if using). Stir well and let it simmer for about 5 minutes. Season with salt and pepper to taste.

            Mix in Cheese: In a large mixing bowl, combine the drained pasta with the sausage and pepper mixture. Fold in the ricotta cheese until evenly combined.

              Prepare for Baking: Transfer the pasta mixture into a greased 9x13 inch (or equivalent) baking dish. Spread it out evenly.

                Top with Cheese: Sprinkle the shredded mozzarella and grated Parmesan cheese evenly over the top of the pasta.

                  Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the cheese is bubbly and golden brown.

                    Garnish and Serve: Remove from the oven and let it cool for a few minutes. Garnish with fresh basil leaves if desired before serving.
