Savory Sweet Potato and Turkey Skillet

2 medium sweet potatoes, peeled and diced

1 pound ground turkey

1 small onion, finely chopped

2 cloves garlic, minced

1 red bell pepper, diced

1 teaspoon paprika

1 teaspoon ground cumin

½ teaspoon chili powder

Salt and pepper to taste

2 tablespoons olive oil

½ cup low-sodium chicken broth

1 cup fresh spinach

2 tablespoons fresh parsley, chopped (for garnish)

Optional: 1 avocado, sliced (for serving)

Instructions
 

Cook Sweet Potatoes: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced sweet potatoes and a pinch of salt. Sauté for about 10-12 minutes, stirring occasionally, until they are golden brown and tender. Remove them from the skillet and set aside.

    Sauté Turkey: In the same skillet, add the remaining tablespoon of olive oil. Add the chopped onion and cook for 2-3 minutes until translucent. Stir in the minced garlic and ground turkey, breaking it apart with a spatula. Cook until the turkey is no longer pink, about 6-8 minutes.

      Flavor It Up: Once the turkey is cooked, stir in the paprika, cumin, chili powder, and season with salt and pepper to taste. Add the diced red bell pepper and cook for another 3-4 minutes until the pepper is softened.

        Combine Everything: Return the cooked sweet potatoes to the skillet, pour in the chicken broth, and stir to combine. Let it simmer for about 5 minutes, allowing the flavors to meld.

          Add Greens: Stir in the fresh spinach and cook for an additional 2-3 minutes until wilted. Taste and adjust seasoning if necessary.

            Serve: Remove from heat and garnish with chopped parsley. Serve hot, with avocado slices on top if desired.
