Ingredients

1 lb ground turkey

2 medium sweet potatoes, peeled and diced

1 cup carrots, diced

1 cup frozen peas

1 small onion, finely chopped

2 cloves garlic, minced

1 cup chicken broth

1 tablespoon Worcestershire sauce

1 teaspoon dried thyme

1 teaspoon dried rosemary

2 tablespoons olive oil

Salt and pepper to taste

1/2 cup shredded cheddar cheese (optional, for topping)

Fresh parsley, chopped (for garnish)

Instructions

Prep the Sweet Potatoes: In a large pot, add the diced sweet potatoes and cover them with water. Bring to a boil and cook until tender, about 15 minutes. Drain and mash with a fork or potato masher. Set aside.

Cook the Turkey Filling: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until translucent, about 2-3 minutes. Add the ground turkey and cook until browned, breaking it apart with a spatula.

Add Vegetables and Seasonings: Stir in the diced carrots, frozen peas, chicken broth, Worcestershire sauce, thyme, rosemary, salt, and pepper. Let the mixture simmer for about 10 minutes, allowing the flavors to combine and the sauce to slightly thicken.

Assemble the Pie: Preheat your oven to 400°F (200°C). In a greased baking dish, spread the turkey mixture evenly at the bottom. Layer the mashed sweet potatoes on top, smoothing it out with a spatula. If using, sprinkle the shredded cheddar cheese over the top for a delicious cheesy crust.

Bake: Place the dish in the oven and bake for 20-25 minutes, or until the top is lightly browned and the cheese (if used) is melted and bubbling.

Garnish and Serve: Remove from the oven and let it cool for a few minutes. Garnish with fresh chopped parsley before serving. Enjoy your warm and comforting Shepherd’s Pie!
