Sheet Pan Lemon Herb Salmon and Veggies

For the Salmon:

4 (6-ounce) salmon fillets, skin-on

2 tablespoons olive oil

2 cloves garlic, minced

Zest of 1 lemon

Juice of 1 lemon

1 teaspoon dried oregano

1 teaspoon dried thyme

1 teaspoon salt

1/2 teaspoon black pepper

Fresh parsley, chopped, for garnish

For the Veggies:

1 cup cherry tomatoes, halved

1 medium zucchini, sliced into half-moons

1 bell pepper (red or yellow), sliced

1 red onion, cut into wedges

1 cup asparagus, trimmed

2 tablespoons olive oil (for veggies)

1 teaspoon garlic powder

Salt and pepper to taste

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Marinade: In a small bowl, combine olive oil, minced garlic, lemon zest, lemon juice, dried oregano, dried thyme, salt, and black pepper. Mix well.

      Marinate the Salmon: Place the salmon fillets in a large bowl or a zip-top bag and pour the marinade over them. Make sure the salmon is well-coated. Let it marinate in the refrigerator for 15-30 minutes to absorb the flavors.

        Prepare the Vegetables: In a separate bowl, combine cherry tomatoes, zucchini, bell pepper, red onion, asparagus, olive oil, garlic powder, salt, and pepper. Toss until the vegetables are evenly coated.

          Arrange on Sheet Pan: On a large baking sheet lined with parchment paper, arrange the marinated salmon fillets in the center. Surround them with the seasoned vegetables, spreading them out for even roasting.

            Roast in the Oven: Place the sheet pan in the preheated oven and roast for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork, and the vegetables are tender and slightly caramelized.
