Shrimp Skewers with Pineapple Salsa

For the Shrimp Skewers:

1 pound large shrimp (peeled and deveined)

2 tablespoons olive oil

3 cloves garlic (minced)

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon cumin

Salt and pepper to taste

8-10 wooden or metal skewers (if using wooden, soak in water for 30 minutes)

For the Pineapple Salsa:

1 cup fresh pineapple (diced)

1/2 red bell pepper (diced)

1/2 red onion (finely chopped)

1 jalapeño (seeded and finely chopped)

1/4 cup fresh cilantro (chopped)

Juice of 1 lime

Salt to taste

Marinate the Shrimp: In a large bowl, combine the olive oil, minced garlic, smoked paprika, garlic powder, cumin, salt, and pepper. Add the shrimp and toss until well coated. Cover and let marinate for at least 30 minutes in the refrigerator.

    Prepare the Pineapple Salsa: In a separate bowl, mix together the diced pineapple, red bell pepper, red onion, jalapeño, and cilantro. Squeeze fresh lime juice over the mixture and season with salt to taste. Stir well and let it sit for the flavors to meld.

      Preheat the Grill: Preheat your grill or grill pan over medium-high heat. If using a grill, oil the grates to prevent sticking.
