1/4 cup chia seeds

2 tablespoons matcha powder

1 teaspoon vanilla extract

Pinch of sea salt

Fresh fruit and shredded coconut for topping (optional)

Instructions
 

In a medium-sized bowl, whisk together the coconut milk, almond milk, and maple syrup until well combined.

    Add the matcha powder, vanilla extract, and a pinch of sea salt. Whisk until the matcha is fully dissolved and the mixture is smooth.

      Stir in the chia seeds, ensuring they are evenly distributed. Allow the mixture to sit for about 5 minutes, then give it another good whisk to prevent clumping.

        Cover the bowl with plastic wrap or transfer the mixture to individual serving cups. Refrigerate for at least 4 hours, or overnight for best results, allowing the chia seeds to absorb the liquid and thicken the pudding.

          Once set, give the pudding a good stir before serving.
