8 oz elbow macaroni

4 cups sharp cheddar cheese, shredded

1 cup smoked gouda cheese, shredded

1 cup heavy cream

1 cup whole milk

4 strips thick-cut bacon, chopped

1/4 cup unsalted butter

1/4 cup all-purpose flour

2 tsp Dijon mustard

1/2 tsp garlic powder

1/2 tsp onion powder

Salt and pepper to taste

1/2 cup panko bread crumbs

1/4 cup fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the elbow macaroni until al dente, according to package instructions. Drain and set aside.

    Cook the Bacon: In a large skillet over medium heat, add the chopped bacon. Cook until crispy, about 5-7 minutes. Remove the bacon from the skillet and place it on a paper towel to drain excess fat. Reserve 1 tablespoon of the bacon grease in the skillet.

      Make the Roux: In the same skillet with the bacon grease, melt the butter over medium heat. Stir in the flour, whisking continuously for about 2-3 minutes until it turns light golden brown.

        Add Dairy: Slowly pour in the heavy cream and whole milk, continuing to whisk until the mixture thickens, about 4-5 minutes.

          Cheese Time: Reduce heat to low and stir in the shredded cheddar and gouda cheeses until melted and smooth. Add the Dijon mustard, garlic powder, onion powder, and season with salt and pepper to taste.

            Combine Pasta and Cheese: Gently fold the cooked macaroni into the cheese sauce until well-coated. Stir in the crispy bacon bits.

              Prepare for Baking: Preheat your oven to 350°F (175°C). Transfer the mac and cheese mixture to a greased 9x13 inch baking dish.
