Ingredients

1 lb large shrimp, peeled and deveined

2 medium zucchinis, spiralized into noodles

4 cloves garlic, minced

2 tablespoons olive oil

1 tablespoon butter

Juice and zest of 1 lemon

Salt and pepper to taste

1/4 teaspoon red pepper flakes (optional for heat)

Fresh parsley, chopped (for garnish)

Grated Parmesan cheese (for serving, optional)

Instructions

Prepare the Zoodles: Start by spiralizing the zucchinis into noodles using a spiralizer. If you don't have one, you can use a julienne peeler or knife to create thin strips. Set aside in a colander and sprinkle lightly with salt to draw out excess moisture; let sit for about 10 minutes.

Sauté Shrimp: In a large skillet over medium-high heat, add 2 tablespoons of olive oil and 1 tablespoon of butter. Once melted and hot, add the minced garlic and red pepper flakes (if using). Sauté for about 30 seconds until fragrant.

Cook Shrimp: Add the shrimp to the skillet in a single layer. Season with a little salt and pepper. Cook for 2-3 minutes on one side until they turn pink, then flip them over and cook for another 1-2 minutes until fully cooked through.

Add Flavor: Squeeze in the juice of the lemon and add the lemon zest to the shrimp. Stir well to combine, ensuring the shrimp are coated in the garlicky lemon sauce.

Crisp Zoodles: Remove the shrimp from the skillet and cover to keep warm. In the same skillet, add the spiralized zucchini noodles. Toss in the remaining sauce and sauté for just 1-2 minutes until the zoodles are slightly softened but still have a bite.

Combine & Serve: Return the shrimp to the skillet, mixing everything gently together. Taste and adjust seasoning with more salt, pepper, or lemon juice if desired.

Plate Up: Serve the shrimp and zucchini noodles warm, garnished with fresh parsley and grated Parmesan cheese if you like. Enjoy your zesty, low-carb dish!
