Slow Cooked Maple Apple Pork Chops

4 bone-in pork chops (about 1-inch thick)

2 tablespoons olive oil

Salt and pepper to taste

1 cup apple cider

1/2 cup pure maple syrup

1 teaspoon ground cinnamon

1/2 teaspoon nutmeg

2 medium apples, cored and sliced (preferably Granny Smith or Honeycrisp)

1 large onion, thinly sliced

4 cloves garlic, minced

1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried)

1 tablespoon apple cider vinegar

1/2 cup chicken broth (optional, for added flavor)

Chopped fresh parsley for garnish (optional)

Instructions
 

Sear the Pork Chops: In a large skillet, heat olive oil over medium-high heat. Season the pork chops with salt and pepper. Once the oil is hot, sear the pork chops for about 3-4 minutes on each side, until golden brown. Remove from skillet and set aside.

    Prepare the Slow Cooker: In the slow cooker, combine the apple cider, maple syrup, ground cinnamon, nutmeg, sliced apples, onion, minced garlic, rosemary, apple cider vinegar, and chicken broth (if using). Stir to mix well.

      Add Pork Chops: Place the seared pork chops on top of the apple mixture in the slow cooker, ensuring they are slightly submerged in the sauce.

        Slow Cook: Cover and cook on low for 6-8 hours or on high for 3-4 hours, or until the pork chops are tender and fully cooked (internal temperature should reach 145°F).
