Slow Cooker BBQ Pulled Beef Sandwiches

3 to 4 lbs beef chuck roast

1 tablespoon olive oil

1 large onion, sliced

4 cloves garlic, minced

2 cups beef broth

1 cup BBQ sauce (your favorite brand)

2 tablespoons Worcestershire sauce

1 tablespoon apple cider vinegar

1 tablespoon brown sugar

2 teaspoons smoked paprika

1 teaspoon ground cumin

1 teaspoon chili powder

Salt and pepper, to taste

8 to 10 sandwich rolls or burger buns

Coleslaw (optional, for topping)

Instructions
 

Sear the Beef: In a large skillet, heat the olive oil over medium-high heat. Season the beef chuck roast with salt and pepper on all sides. Once the oil is hot, sear the beef on all sides until browned (about 3-4 minutes per side). This step will enhance the flavors, so don’t skip it!

    Prepare the Slow Cooker: Place the sliced onions and minced garlic at the bottom of the slow cooker. This will form a flavorful base for the beef.

      Add the Beef: Carefully place the browned beef roast on top of the onions in the slow cooker.

        Mix the Sauce: In a bowl, whisk together the beef broth, BBQ sauce, Worcestershire sauce, apple cider vinegar, brown sugar, smoked paprika, ground cumin, chili powder, and a pinch of salt and pepper. Pour this mixture over the roast in the slow cooker.

          Cook Low and Slow: Cover the slow cooker with the lid and set it to low. Cook for 8 to 10 hours, or until the beef is fork-tender and can be easily shredded.

            Shred the Beef: Once finished cooking, remove the beef from the slow cooker and place it on a cutting board. Using two forks, shred the beef into bite-sized pieces.

              Combine with Sauce: Return the shredded beef to the slow cooker, mixing it well with the remaining BBQ sauce to ensure every piece is coated.

                Assemble the Sandwiches: Toast the sandwich rolls or buns if desired. Spoon a generous amount of the pulled beef mixture onto the bottom half of each roll, then top with coleslaw if using. Place the top half of the roll over the beef.
