Slow Cooker Beef Stew with Vegetables

2 lbs (900g) beef chuck roast, cut into 1-inch cubes

1 tablespoon olive oil

1 large onion, diced

4 cloves garlic, minced

4 medium carrots, sliced

3 medium potatoes, peeled and diced

2 celery stalks, diced

1 cup green beans, trimmed and cut into 1-inch pieces

1 cup frozen peas

1 teaspoon dried thyme

1 teaspoon dried rosemary

2 bay leaves

4 cups beef broth

1 cup red wine (optional, or replace with additional beef broth)

2 tablespoons Worcestershire sauce

Salt and pepper, to taste

2 tablespoons cornstarch (optional, for thickening)

2 tablespoons cold water (optional, for thickening)

Instructions
 

Sear the Beef: In a large skillet over medium-high heat, add olive oil. Once hot, season the beef cubes with salt and pepper, then add them to the skillet in batches. Sear on all sides until browned, about 5-7 minutes. Transfer the browned beef to the slow cooker.

    Sauté the Aromatics: In the same skillet, add diced onions and sauté for 3-4 minutes until translucent. Add minced garlic and cook for an additional minute until fragrant. Transfer this mixture to the slow cooker.

      Add Vegetables: To the slow cooker, add sliced carrots, diced potatoes, diced celery, green beans, and frozen peas.

        Season the Stew: Sprinkle in the dried thyme, dried rosemary, and add the bay leaves. Pour in the beef broth, red wine (if using), and Worcestershire sauce. Stir everything gently to combine.

          Slow Cook: Cover the slow cooker with the lid and cook on low for 7-8 hours or on high for 4-5 hours, until the beef is tender and the flavors are well combined.

            Thicken (Optional): If you prefer a thicker stew, mix the cornstarch and cold water in a small bowl to create a slurry. About 30 minutes before serving, stir this mixture into the stew, and continue to cook without the lid to thicken.

              Serve: Once cooked, taste and adjust seasoning with salt and pepper as needed. Remove the bay leaves before serving. Ladle the hearty beef stew into bowls and enjoy the cozy flavors.
