Ingredients

2 cups cooked chicken, shredded

12 lasagna noodles (no-boil preferred)

3 cups Alfredo sauce (store-bought or homemade)

15 ounces ricotta cheese

2 cups shredded mozzarella cheese

1 cup grated Parmesan cheese

1 cup fresh spinach leaves, chopped (optional)

1 teaspoon garlic powder

1/2 teaspoon Italian seasoning

Salt and pepper to taste

1/4 cup fresh parsley, chopped (for garnish)

Instructions

Prepare the Chicken: If you haven't done so already, cook the chicken (grilling, boiling, or baking) and shred it into bite-sized pieces.

Mix the Ricotta: In a bowl, combine the ricotta cheese, garlic powder, Italian seasoning, salt, and pepper to taste. Mix until smooth.

      Layer Ingredients:

        - Start by adding a thin layer of Alfredo sauce to the bottom of the slow cooker.

          - Place 3 lasagna noodles on top of the sauce. It’s okay if they overlap slightly.

            - Spread half of the ricotta mixture over the noodles, followed by half of the shredded chicken, half of the spinach (if using), and a third of the mozzarella.

              - Repeat this layering process: another layer of Alfredo sauce, followed by noodles, the remaining ricotta, remaining chicken, the rest of the spinach, and another third of the mozzarella.

Final Layers: For the last layer, cover it with the remaining noodles, top with the rest of the Alfredo sauce, and finish with the remaining mozzarella and Parmesan cheese.

Cook: Cover the slow cooker with the lid and cook on low for 4-5 hours or high for 2-3 hours. The cheese should be melted, and the noodles will be tender.

Serve: Once cooked, turn off the slow cooker and let it sit for 10-15 minutes. Slice into portions and garnish with fresh parsley before serving.

Enjoy: Serve warm with a side salad and garlic bread for a complete meal!
