Ingredients

2 cups uncooked pasta (penne or rotini)

1 can (15 oz) creamy hatch green chili sauce

1 can (14.5 oz) diced tomatoes, undrained

2 cups chicken or vegetable broth

1 cup heavy cream

1 medium onion, diced

3 cloves garlic, minced

1 cup corn (fresh, frozen, or canned)

1 cup shredded cheese (cheddar or pepper jack)

1 teaspoon ground cumin

1 teaspoon smoked paprika

Salt and pepper, to taste

Fresh cilantro, for garnish (optional)

Red pepper flakes, for heat (optional)

Instructions

Prepare the Slow Cooker: Begin by lightly greasing your slow cooker with cooking spray or a small amount of oil to prevent sticking.

Combine Ingredients: In the slow cooker, add the uncooked pasta, creamy hatch green chili sauce, diced tomatoes, chicken or vegetable broth, heavy cream, diced onion, minced garlic, corn, ground cumin, smoked paprika, salt, and pepper. Stir well to combine all ingredients thoroughly.

Cook: Cover the slow cooker with its lid and set it to cook on low for 4 hours or on high for 2 hours.

Add Cheese: Once the cooking time is up, uncover the slow cooker and stir in the shredded cheese until melted and creamy. If the pasta appears too thick, you can add a splash of additional broth or cream to reach your desired consistency.

Serve: Spoon the creamy pasta into bowls, topping with optional fresh cilantro and red pepper flakes for added flavor and heat.

Enjoy: Serve warm and enjoy the rich, comforting flavors of this creamy hatch chili pasta.
