1 medium zucchini, diced

2 cups assorted fresh fruits (such as peaches, strawberries, and blueberries), chopped

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

Salt and pepper to taste

1 cup pizza sauce

1 cup shredded mozzarella cheese (optional, for serving)

Fresh basil or cilantro for garnish (optional)

Prepare the Ingredients: Start by prepping all your ingredients. Dice the onion, bell pepper, and zucchini, chop the garlic, and prepare your assorted fruits. If you’re using frozen corn, make sure it's thawed.

    Layer in the Slow Cooker: In a slow cooker, begin layering your ingredients. Start with the black beans and kidney beans at the bottom.

      Add Veggies and Fruits: Next, add the diced tomatoes (with their juices), onion, garlic, bell pepper, corn, zucchini, and the chopped fruits. It’s important to keep the fruits towards the top to maintain their integrity during cooking.
