Slow Cooker Garlic Butter Mushrooms

1.5 pounds (700g) fresh button or cremini mushrooms, cleaned and stems trimmed

6 tablespoons unsalted butter, melted

4 cloves garlic, minced

1 teaspoon dried thyme (or 2 teaspoons fresh thyme, chopped)

1 teaspoon dried rosemary (or 2 teaspoons fresh rosemary, chopped)

1/2 teaspoon red pepper flakes (optional, for a kick)

Salt and freshly ground black pepper, to taste

2 tablespoons fresh parsley, chopped (for garnish)

1 tablespoon soy sauce (optional, for umami)

Instructions
 

Prepare the Mushrooms: In a large bowl, add the cleaned mushrooms. If they are large, you may want to halve them for even cooking.

    Mix the Garlic Butter: In a separate small bowl, combine the melted butter, minced garlic, thyme, rosemary, red pepper flakes (if using), salt, and black pepper. If you’re adding soy sauce, include it in this mix as well. Stir well to combine.

      Combine: Pour the garlic butter mixture over the mushrooms and gently toss until all mushrooms are evenly coated.

        Slow Cook: Transfer the mushrooms into the slow cooker. Cover and cook on low for 4-5 hours or on high for 2-3 hours, until the mushrooms are tender and have absorbed the flavors.

          Finishing Touches: Once cooked, taste and adjust seasoning with more salt and pepper as needed. If you want more flavor, you can also drizzle with a bit more melted butter at this point.

            Serve: Transfer the garlic butter mushrooms to a serving dish and garnish with fresh parsley. Serve warm as an appetizer, side dish, or over pasta for a main course!
