3-4 pounds pork shoulder or pork loin

6 cloves garlic, minced

2 tablespoons fresh rosemary, chopped (or 2 teaspoons dried)

2 tablespoons fresh thyme, chopped (or 2 teaspoons dried)

2 tablespoons olive oil

1 teaspoon salt

1 teaspoon black pepper

1 cup low-sodium chicken broth

2 tablespoons apple cider vinegar

1 onion, sliced

3 carrots, cut into chunks

3 potatoes, cut into chunks

Fresh parsley, for garnish

Instructions
 

Prepare the Pork: In a small bowl, mix together the minced garlic, rosemary, thyme, olive oil, salt, and black pepper to create a herb paste. Rub this mixture generously over the pork roast, ensuring it’s well-coated on all sides.

    Layer Vegetables: In the bottom of the slow cooker, layer the sliced onion, carrots, and potatoes. This will create a bed for the pork and infuse the vegetables with flavor.

      Add the Pork: Place the seasoned pork roast on top of the vegetables in the slow cooker.

        Mix Broth and Vinegar: In a separate bowl, mix the chicken broth and apple cider vinegar together. Pour this mixture over the pork roast and vegetables in the slow cooker.
