2 pounds beef chuck roast, cut into 1-inch cubes

2 tablespoons olive oil

1 large onion, diced

4 cloves garlic, minced

2 cups Hatch green chiles, roasted, peeled, and diced (or canned if unavailable)

4 medium potatoes, peeled and diced

3 carrots, sliced

2 cups beef broth

1 tablespoon tomato paste

1 teaspoon ground cumin

1 teaspoon smoked paprika

1 teaspoon dried oregano

1 teaspoon salt (or to taste)

½ teaspoon black pepper

1 bay leaf

Fresh cilantro for garnish

Lime wedges for serving

Prepare the Beef: In a large skillet, heat the olive oil over medium-high heat. Season the beef cubes with salt and pepper, and brown them in batches for about 5-7 minutes per batch. Transfer the browned beef to the slow cooker.

    Sauté Aromatics: In the same skillet, add the diced onion and garlic. Sauté until the onions are translucent, about 3-4 minutes. This will add flavor to the stew.

      Combine Ingredients: In the slow cooker with the beef, add the sautéed onions and garlic, diced Hatch green chiles, potatoes, carrots, beef broth, tomato paste, cumin, smoked paprika, oregano, and bay leaf. Stir well to combine all ingredients.

        Slow Cook: Cover the slow cooker with the lid and cook on low for 8 hours or on high for 4 hours. This allows the flavors to meld beautifully and the meat to become tender.
