Ingredients

2 lbs beef chuck, cut into 1-inch cubes

2 tbsp olive oil

1 large onion, chopped

4 cloves garlic, minced

4 medium carrots, sliced into rounds

3 medium potatoes, diced

1 cup celery, chopped

1 bell pepper, diced (red or green)

1 cup beef broth

1/2 cup honey

1/4 cup soy sauce

2 tbsp Worcestershire sauce

1 tbsp cornstarch (optional, for thickening)

1 tsp dried thyme

1 tsp dried rosemary

Salt and pepper to taste

Fresh parsley for garnish

Instructions

Sear the Beef: In a large skillet, heat the olive oil over medium-high heat. Add the beef chuck cubes in batches, searing them on all sides until browned. This process helps to lock in flavor. Transfer the browned beef to the slow cooker.

Cook the Aromatics: In the same skillet, add the chopped onion and minced garlic. Sauté for 2-3 minutes until the onion is translucent and fragrant. Add them to the slow cooker.

Add Vegetables: To the slow cooker, add the sliced carrots, diced potatoes, chopped celery, and bell pepper, spreading them evenly over the beef.

Mix the Sauce: In a medium bowl, whisk together the beef broth, honey, soy sauce, Worcestershire sauce, thyme, rosemary, salt, and pepper. Pour this mixture over the meat and vegetables in the slow cooker.

Slow Cook: Cover the slow cooker and set it to low heat for 8 hours or high heat for 4 hours. If the stew needs thickening, mix cornstarch with a little water to create a slurry and add it in the last hour of cooking.

Final Touches: Once cooked, taste and adjust seasoning if necessary. You may want to add more honey for sweetness or soy sauce for saltiness, depending on your preference.

Serve: Ladle the beef stew into bowls, and garnish with fresh parsley. Serve warm with crusty bread or over rice for a hearty meal.
