4 boneless pork chops (about 1 inch thick)

1/4 cup honey

1/4 cup Dijon mustard

1 tablespoon apple cider vinegar

3 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper, to taste

1 tablespoon olive oil

1 medium onion, sliced

1 cup low-sodium chicken broth

Fresh parsley, chopped (for garnish)

Prepare the Pork Chops: Season both sides of the pork chops with salt and pepper. In a skillet over medium-high heat, heat olive oil. Once hot, sear the pork chops for about 2-3 minutes on each side until golden brown. Remove from skillet and set aside.

    Make the Sauce: In a medium bowl, whisk together honey, Dijon mustard, apple cider vinegar, minced garlic, thyme, rosemary, and a pinch of salt and pepper until well combined.

      Layer the Slow Cooker: Place the sliced onions at the bottom of the slow cooker. Pour 1/2 cup of chicken broth over the onions to prevent burning and to create a base for the chops.

        Add the Pork Chops: Place the seared pork chops on top of the onions in the slow cooker. Pour the honey mustard sauce over the pork chops, ensuring they are evenly coated. Add the remaining chicken broth around the edges of the chops.

          Cook: Cover the slow cooker and cook on low for 6-7 hours or high for 3-4 hours. The pork should be tender and fully cooked (internal temperature should reach 145°F).
