Smoky Chipotle Black Bean Chili

2 cans (15 oz each) black beans, drained and rinsed

1 can (15 oz) diced tomatoes with green chilies

1 medium onion, diced

3 cloves garlic, minced

2 tbsp olive oil

1-2 chipotle peppers in adobo sauce, chopped (adjust for heat preference)

1 tsp adobo sauce from the chipotle can

1 tsp ground cumin

1 tsp smoked paprika

1 tsp dried oregano

1 bell pepper (red or green), diced

1 cup vegetable broth

Salt and pepper to taste

1/2 cup corn (fresh or frozen)

Fresh cilantro, chopped (for garnish)

Avocado, diced (for garnish)

Lime wedges (for serving)

Instructions
 

Sauté the Vegetables: In a large pot, heat the olive oil over medium heat. Add the diced onion and bell pepper, cooking until soft (about 5-7 minutes). Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

    Spice It Up: Add the chopped chipotle peppers, adobo sauce, ground cumin, smoked paprika, and oregano to the pot. Stir well to combine and cook for 1-2 minutes, allowing the spices to bloom.

      Combine the Beans and Tomatoes: Pour in the drained black beans, canned tomatoes (with juices), corn, and vegetable broth. Stir to combine all the ingredients thoroughly.

        Simmer: Bring the chili to a gentle boil, then reduce heat to low. Cover and let it simmer for at least 20-30 minutes, stirring occasionally. If it gets too thick, add a little more vegetable broth or water.
