1 lb large shrimp, peeled and deveined

2 tablespoons olive oil

2 tablespoons adobo sauce (from a can of chipotle peppers)

1 teaspoon smoked paprika

1 teaspoon ground cumin

1 teaspoon garlic powder

½ teaspoon salt

¼ teaspoon black pepper

Juice of 1 lime

8 small corn tortillas

1 cup red cabbage, shredded

1 avocado, sliced

½ cup fresh cilantro, chopped

Instructions
 

Marinate the Shrimp: In a medium bowl, combine the olive oil, adobo sauce, smoked paprika, cumin, garlic powder, salt, black pepper, and lime juice. Add the shrimp and toss until they are well coated. Cover and let marinate for at least 15 minutes, or up to 30 minutes for increased flavor.

    Cook the Shrimp: Heat a large skillet over medium-high heat. Remove the shrimp from the marinade, allowing any excess marinade to drip off. Add the shrimp to the skillet in a single layer. Cook for 2-3 minutes per side, or until the shrimp are pink and opaque (cooked through). Remove from heat.

      Warm the Tortillas: In a separate dry skillet over medium heat, warm the corn tortillas for about 30 seconds on each side until pliable and slightly toasted. You can also wrap them in aluminum foil and warm them in a low oven if preferred.

        Assemble the Tacos: To each tortilla, add a few shrimp, a handful of shredded red cabbage, and a slice of avocado. Sprinkle fresh cilantro on top.

          Serve: Serve the tacos warm with a side of salsa. You can also add more lime juice and additional toppings like crema, lime wedges, or sliced jalapeños if desired.
