Smoky Gouda Mac and Cheese Bites

2 cups elbow macaroni

3 tablespoons unsalted butter

3 tablespoons all-purpose flour

2 cups whole milk

1 teaspoon smoked paprika

1 teaspoon garlic powder

½ teaspoon onion powder

½ teaspoon black pepper

¼ teaspoon cayenne pepper (optional for extra heat)

2 cups shredded smoked Gouda cheese

1 cup shredded sharp cheddar cheese

1 cup breadcrumbs (panko or regular)

½ cup grated Parmesan cheese

2 large eggs

Salt, to taste

Cooking spray or additional oil for greasing

Cook the Pasta: In a large pot of salted boiling water, cook the macaroni according to package instructions until al dente. Drain and set aside.

    Prepare the Cheese Sauce: In a medium saucepan over medium heat, melt the butter. Stir in the flour to create a roux and cook for about 2 minutes until bubbly.

      Add Milk and Spices: Gradually whisk in the whole milk, ensuring there are no lumps. Continue to whisk until the mixture thickens and begins to bubble (about 5 minutes). Stir in the smoked paprika, garlic powder, onion powder, black pepper, and cayenne pepper, if using.

        Melt the Cheeses: Reduce heat to low and gradually stir in the smoked Gouda and sharp cheddar cheeses until fully melted and smooth.

          Combine Pasta and Sauce: Add the drained macaroni to the cheese sauce and mix until well-coated. Adjust seasoning with salt if needed.
