Smoky Harissa Chickpea Wraps

Ingredients
  

1 can (15 oz) chickpeas, drained and rinsed

2 tablespoons harissa paste (adjust to your spice preference)

1 tablespoon olive oil

1 teaspoon smoked paprika

½ teaspoon garlic powder

½ teaspoon cumin

Salt and pepper to taste

1 large avocado, sliced

1 cup mixed greens (spinach, arugula, or lettuce)

½ cup cherry tomatoes, halved

½ cucumber, thinly sliced

4 large whole wheat or spinach wraps

Fresh lemon juice (for drizzling)

Optional: Fresh herbs (cilantro or parsley) for garnish

Instructions
 

Prep Chickpeas: In a medium-sized bowl, combine the drained chickpeas, harissa paste, olive oil, smoked paprika, garlic powder, cumin, salt, and pepper. Using a fork or potato masher, lightly mash the chickpeas until they are slightly broken while still maintaining some whole chickpeas for texture.

    Heat Mixture: In a non-stick skillet over medium heat, pour the seasoned chickpea mixture. Cook for about 5-7 minutes, stirring frequently until heated through and slightly crispy. Remove from heat and set aside.

      Assemble Wraps: Lay the whole wheat or spinach wraps flat on a clean surface. On each wrap, layer a generous handful of mixed greens, a few slices of avocado, a portion of the smoky chickpea mix, halved cherry tomatoes, and cucumber slices.

        Drizzle & Roll: Drizzle fresh lemon juice over the fillings and add fresh herbs if using. Fold in the sides of the wrap, then roll tightly from the bottom up to secure the fillings inside.
