8 small corn tortillas

4 large eggs

1 cup smoked shredded cheese (like Gouda or a smoked cheddar)

1 can (15 oz) black beans, drained and rinsed

1 cup roasted Hatch green chiles, diced (fresh or canned)

1/2 cup red onion, finely chopped

1/2 cup cherry tomatoes, halved

1 avocado, diced

1/4 cup fresh cilantro, chopped

1 tablespoon olive oil

1 teaspoon smoked paprika

Salt and pepper, to taste

Lime wedges, for serving

Salsa verde or your favorite hot sauce, for drizzle

Instructions
 

Prepare the Tortillas: Heat a non-stick skillet over medium heat. Lightly toast the corn tortillas for about 30 seconds on each side until warm and slightly charred. Remove from the skillet and keep warm by wrapping in a clean kitchen towel.

    Cook the Eggs: In the same skillet, add the olive oil. Crack the eggs into a bowl, season with salt, pepper, and smoked paprika, then whisk until well combined. Pour the eggs into the heated skillet and scramble gently. Cook until just set, about 3-4 minutes, then remove from heat.
