Ingredients

1 lb elbow macaroni

4 cups sharp cheddar cheese, shredded

1 cup Gruyère cheese, shredded

1 cup cream cheese, softened

4 cups whole milk

1/2 cup unsalted butter (1 stick)

1/2 cup all-purpose flour

1 tsp onion powder

1 tsp garlic powder

1 tsp smoked paprika

1/2 tsp cayenne pepper (adjust for heat)

Salt and black pepper to taste

1 cup breadcrumbs (for topping)

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C).

Cook the Pasta: In a large pot, bring salted water to a boil. Add the elbow macaroni and cook until al dente (about 6-8 minutes). Drain and set aside.

Make the Cheese Sauce: In a large saucepan, melt the butter over medium heat. Once melted, whisk in the flour to create a roux, stirring constantly for about 2 minutes until it becomes golden.

Add the Milk: Gradually pour in the whole milk, whisking continuously to avoid lumps. Keep stirring until the mixture thickens (about 5-7 minutes).

Incorporate the Cheeses: Lower the heat and add the softened cream cheese, cheddar cheese, and Gruyère cheese gradually, stirring until they have fully melted and the sauce is smooth.

Season the Sauce: Add the onion powder, garlic powder, smoked paprika, cayenne pepper, and season with salt and black pepper to taste. Stir to combine.

Combine Pasta and Sauce: Add the cooked macaroni to the cheese sauce, mixing well until all pasta is well coated.

Prepare for Baking: Transfer the mac and cheese to a greased 9x13 inch baking dish. Smooth the top with a spatula.

Breadcrumb Topping: In a small bowl, combine the breadcrumbs with a tablespoon of melted butter. Sprinkle evenly over the mac and cheese.

Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the top is golden brown and bubbly.

Garnish and Serve: Remove from the oven and let it cool slightly. Garnish with freshly chopped parsley before serving.
