1 pound ground chicken

1 tablespoon olive oil

1 small onion, diced

2 cloves garlic, minced

1 red bell pepper, diced

1 cup corn (fresh, frozen, or canned)

1 can (15 oz) black beans, rinsed and drained

1 teaspoon chili powder

1 teaspoon cumin

½ teaspoon smoked paprika

Salt and pepper, to taste

8 large romaine lettuce leaves (or butter lettuce for a sweeter flavor)

½ cup diced tomatoes

½ cup shredded cheddar cheese

¼ cup fresh cilantro, chopped

Lime wedges, for serving

Optional toppings: avocado slices, sour cream, salsa

Instructions
 

Cook the Chicken: In a large skillet, heat the olive oil over medium heat. Add the diced onion and garlic, sautéing for about 2-3 minutes until fragrant and translucent.

    Brown the Meat: Add the ground chicken to the skillet, breaking it up with a spatula. Cook until it’s no longer pink, about 5-7 minutes.
