Southwest Chicken & Sweet Potato Hash

2 medium sweet potatoes, peeled and diced into 1/2-inch cubes

1 tablespoon olive oil

1/2 teaspoon smoked paprika

1/2 teaspoon cumin

1/2 teaspoon chili powder

Salt and pepper to taste

1 pound boneless, skinless chicken breasts, diced

1 red bell pepper, diced

1 green bell pepper, diced

1 small red onion, diced

2 cloves garlic, minced

1/4 cup fresh cilantro, chopped (plus extra for garnish)

1 avocado, diced (for serving)

4 large eggs (optional, for serving)

Lime wedges (for serving)

Instructions
 

Prepare Sweet Potatoes: In a large skillet, heat olive oil over medium heat. Add the diced sweet potatoes. Season with smoked paprika, cumin, chili powder, salt, and pepper. Cook for about 10-12 minutes, stirring occasionally, until the sweet potatoes are tender and slightly caramelized.

    Cook Chicken: In the same skillet, push the sweet potatoes to one side and add the diced chicken. Cook for about 5-7 minutes until the chicken is browned and cooked through, stirring occasionally.

      Add Vegetables: Add the diced red and green bell peppers, red onion, and minced garlic to the skillet. Stir everything to combine. Cook for another 5-7 minutes until the vegetables are soft.

        Mix in Cilantro: Once everything is cooked, gently fold in the chopped cilantro. Adjust seasoning with additional salt and pepper if needed.

          Cook Eggs (Optional): If you’d like to add eggs, you can fry them in a separate skillet to your desired doneness (sunny-side-up or over-easy works great!).
