Spaghetti with Roasted Garlic Butter

12 oz spaghetti

1 whole head of garlic

1/2 cup unsalted butter (1 stick)

1/4 cup extra virgin olive oil

1/4 teaspoon red pepper flakes (optional)

Salt, to taste

Freshly ground black pepper, to taste

1/4 cup chopped fresh parsley

1/2 cup grated Parmesan cheese

Zest of 1 lemon

Juice of 1 lemon

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Roast the Garlic: Slice the top off the whole head of garlic to expose the cloves. Drizzle with a little olive oil and wrap it in aluminum foil. Roast in the oven for about 30-35 minutes, or until the cloves are soft and caramelized. Allow to cool slightly before handling.

      Cook the Spaghetti: While the garlic is roasting, bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente, usually about 8-10 minutes. Reserve 1 cup of pasta cooking water, then drain the spaghetti.

        Prepare the Garlic Butter: In a large skillet, melt the butter over medium-low heat. Squeeze the roasted garlic cloves out of their skins directly into the skillet. Mix well based on your preference for a smoother sauce as you mash the garlic into the butter using a fork or wooden spoon.

          Combine: Add the olive oil to the garlic butter, mixing until fully combined. If using, add the red pepper flakes for a hint of spice. Pour in half of the reserved pasta water and stir to create a sauce.
