Spiced Pumpkin & Lentil Soup

Ingredients
  

2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

1 tablespoon fresh ginger, minced

1 teaspoon ground cumin

1 teaspoon ground coriander

½ teaspoon ground cinnamon

½ teaspoon turmeric

½ teaspoon red pepper flakes (adjust to taste)

1 medium carrot, diced

1 medium celery stalk, diced

4 cups pumpkin puree (fresh or canned)

1 cup dried red lentils, rinsed

6 cups vegetable broth

1 cup coconut milk

Salt and pepper to taste

Fresh cilantro or parsley, for garnish

Optional: A squeeze of lime juice

Instructions
 

Heat the Oil: In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until translucent and fragrant.

    Add Aromatics: Stir in the garlic, ginger, cumin, coriander, cinnamon, turmeric, and red pepper flakes. Cook for an additional 2 minutes until the spices are aromatic.

      Sauté Vegetables: Add the diced carrot and celery to the pot, stirring well for another 5 minutes until they begin to soften.

        Combine Main Ingredients: Pour in the pumpkin puree and mix thoroughly to combine with the sautéed vegetables and spices.

          Add Lentils and Broth: Add the rinsed lentils and vegetable broth, then bring the mixture to a boil. Once boiling, reduce heat to low, cover, and simmer for 20-25 minutes until lentils are fully cooked and tender.

            Blend for Creaminess (Optional): For a creamier texture, use an immersion blender to puree the soup to your desired consistency. Alternatively, you can blend a portion of the soup in a countertop blender and return it to the pot.

              Add Coconut Milk: Stir in the coconut milk, and simmer for another 5 minutes. Season with salt and pepper to taste.

                Finishing Touches: If using, squeeze in a bit of lime juice for brightness.

                  Serve: Ladle the soup into bowls, garnish with fresh cilantro or parsley, and serve hot. Enjoy your nourishing bowl of spiced goodness!
