2 cans (15 oz each) black beans, rinsed and drained

1 medium onion, diced

3 cloves garlic, minced

1 red bell pepper, diced

2 medium carrots, diced

1 jalapeño, seeds removed and minced

1 teaspoon ground cumin

1 teaspoon smoked paprika

½ teaspoon cayenne pepper (adjust for heat preference)

4 cups vegetable broth

1 can (14 oz) diced tomatoes, with juices

1 tablespoon olive oil

Salt and pepper, to taste

Fresh cilantro, for garnish

Sour cream or Greek yogurt, for serving (optional)

Lime wedges, for serving

Instructions
 

Sauté Aromatics: In a large pot over medium heat, add the olive oil. Once hot, add the onion, garlic, red bell pepper, and carrots. Sauté for about 5-7 minutes, or until the vegetables begin to soften.

    Add Heat and Spices: Stir in the minced jalapeño, ground cumin, smoked paprika, and cayenne pepper. Cook for another 2 minutes until the spices are fragrant.

      Combine Ingredients: Add the rinsed black beans, diced tomatoes (with juices), and vegetable broth to the pot. Stir well to combine.
