Ingredients

2 medium cucumbers, thinly sliced

1 ripe mango, diced

1 red bell pepper, finely chopped

1/4 red onion, finely sliced

1/4 cup fresh cilantro, chopped

1 jalapeño pepper, seeded and minced (adjust for spice tolerance)

Juice of 2 limes

2 tablespoons olive oil

1 tablespoon honey or agave syrup (optional)

Salt and black pepper to taste

1/4 teaspoon cayenne pepper (optional for extra heat)

Instructions

Prepare the Vegetables: Start by washing the cucumbers and mango. Slice the cucumbers into thin rounds (or half-moons) and dice the mango into bite-sized pieces. Place them in a large mixing bowl.

Add the Crunch: Finely chop the red bell pepper and red onion, then add them to the bowl with the cucumbers and mango.

Make it Spicy: Mince the jalapeño pepper (be careful not to touch your face after handling) and add it to your vegetable mixture. If you like it spicier, you can toss in an extra pinch of cayenne pepper.

Dress the Salad: In a separate small bowl, whisk together the lime juice, olive oil, honey (if using), salt, black pepper, and any additional cayenne. Taste the dressing and adjust the seasoning as needed.

Combine: Pour the dressing over the salad ingredients and toss gently to combine, ensuring that all the vegetables are well-coated.

Garnish: Finally, add the chopped cilantro on top and give it one last gentle toss.

Chill: For the best flavor, let the salad chill in the refrigerator for at least 30 minutes before serving. This allows the flavors to meld beautifully.

Serve: Stir the salad again prior to serving, taste and adjust any seasoning if needed, and enjoy this refreshing and spicy dish!
