Spicy Hatch Chili Sweet Potato Wraps

2 medium sweet potatoes, peeled and cubed

1 tablespoon olive oil

1 teaspoon smoked paprika

1/2 teaspoon ground cumin

1/2 teaspoon chili powder

Salt and pepper, to taste

1 cup fresh Hatch green chilies, roasted and diced (or canned if unavailable)

1 cup black beans, rinsed and drained

1/2 cup corn kernels (fresh or frozen)

1 avocado, sliced

1 cup spinach or kale

4 large whole wheat tortillas

1/2 cup Greek yogurt or sour cream

Juice of 1 lime

Fresh cilantro, for garnish

Instructions
 

Roast the Sweet Potatoes: Preheat your oven to 400°F (200°C). In a large bowl, toss the sweet potato cubes with olive oil, smoked paprika, ground cumin, chili powder, salt, and pepper. Spread the seasoned sweet potatoes on a baking sheet lined with parchment paper and roast for 25-30 minutes, or until they are tender and slightly caramelized, tossing halfway through.

    Prepare the Filling: In a large mixing bowl, combine the roasted sweet potatoes, diced Hatch chilies, black beans, corn, and lime juice. Gently mix until everything is well incorporated. Adjust seasonings to taste.

      Assemble the Wraps: Lay a whole wheat tortilla flat on a clean surface. In the center of the tortilla, add a generous scoop of the sweet potato mixture. Top with a few slices of avocado and a handful of spinach or kale.

        Wrap It Up: Fold the sides of the tortilla inward over the filling, then roll it tightly from the bottom up to create a wrap. Repeat with the remaining tortillas and filling.
