To maximize the flavor of Hatch chiles without losing their signature heat, timing is crucial. After browning the turkey, reduce the heat to medium and add the chiles to the pan. This method allows the chiles to release their flavors while ensuring they retain their heat. Stir them into the turkey mixture and let them cook for an additional 2-3 minutes. This brief cooking time will soften the chiles slightly while infusing the turkey with their smoky, spicy essence. Be sure to taste as you go—Hatch chiles can vary in spiciness, so adjust the quantity according to your heat preference.

Ingredients

1 lb ground turkey

2 tbsp olive oil

1 small onion, finely chopped

3 cloves garlic, minced

2-3 fresh Hatch green chiles, diced (adjust for spice level)

1 tsp ground cumin

1 tsp smoked paprika

Salt and pepper to taste

1 cup shredded pepper jack cheese

4 large flour or whole wheat tortillas

1 cup baby spinach or mixed greens

1/2 cup sour cream or Greek yogurt

Fresh cilantro, for garnish (optional)

Lime wedges, for serving

Instructions

Prepare the turkey mixture: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.

Cook the garlic and chiles: Stir in the minced garlic and diced Hatch chiles, cooking for an additional 2-3 minutes until fragrant.

Brown the turkey: Add the ground turkey to the skillet and season with cumin, smoked paprika, salt, and pepper. Cook, breaking up the meat with a spatula, until browned and cooked through, about 7-10 minutes.

Combine and melt: Once the turkey is fully cooked, stir in the shredded pepper jack cheese until melted and combined. Remove from heat.

Assemble the wraps: Lay the tortillas flat on a clean surface. Spread a generous spoonful of sour cream (or Greek yogurt) onto each tortilla. Add a layer of baby spinach or mixed greens, followed by the spicy turkey mixture.

Wrap it up: Tightly roll each tortilla into a wrap, tucking in the sides as you go. Slice each wrap in half diagonally.

Serve: Garnish with fresh cilantro and serve with lime wedges on the side for squeezing over the wraps.
