1 lb boneless, skinless chicken thighs, cut into bite-sized pieces

1 tablespoon sesame oil

3 cloves garlic, minced

1-inch piece ginger, minced

1/4 cup soy sauce

2 tablespoons gochujang (Korean red chili paste)

2 tablespoons honey

1 tablespoon rice vinegar

1 tablespoon brown sugar

1 teaspoon black pepper

1/2 teaspoon red pepper flakes (optional for extra spice)

2 green onions, sliced for garnish

1 tablespoon sesame seeds for garnish

Instructions
 

Marinate the Chicken: In a large mixing bowl, combine the soy sauce, gochujang, honey, rice vinegar, brown sugar, sesame oil, minced garlic, minced ginger, black pepper, and red pepper flakes. Stir until well combined.

    Add Chicken: Add the bite-sized chicken pieces to the marinade, ensuring each piece is coated well. Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 30 minutes (or up to overnight for deeper flavor).

      Preheat the Oven (or Grill): If baking, preheat your oven to 400°F (200°C). If grilling, preheat grill to medium-high.

        Bake or Grill the Chicken:

          - For Oven: Line a baking sheet with parchment paper and spread the marinated chicken pieces in a single layer. Bake for 20-25 minutes, flipping halfway through, until the chicken is cooked through and caramelized.

            - For Grill: Thread the marinated chicken onto skewers and grill for about 10-12 minutes, turning occasionally, until fully cooked and slightly charred.
